Wookey Hole Cave Aged cheddar is a deliciously different traditional, PDO West Country Farmhouse Cheddar that has been the subject of countless awards for its unique flavour. And when you look at the process involved in the making of it before it reaches shop shelves, you'll understand why it has so often been crowned champion of cheddars since it was launched in 2006.
Wookey Hole Cave Aged Cheddar starts life in the Dairy and is made using milk sourced from local grazing herds which graze the lush pastures of the Dorset Downs, no further than thirty miles from the Ashley Chase Estate where the dairy is located.
The cheddars are made by hand to traditional cheddar recipes which date back many centuries by a team of highly skilled cheesemakers with over hundred years' experience between them. Once made and pressed into 27kg moulds, the truckles are bandaged in cheese cloth and transported to the Wookey Hole Caves where they are carried 200 feet underground by hand into a dedicated cave. The constant temperature and humidity of the caves provides the ideal conditions for maturing cheddars.
The texture of Wookey Hole Cave Aged Cheddar is firm and the cheese is cream-coloured. The aroma is a complex mix of sweet, creamy, farmy and earthy. The flavours are big, robust and well rounded, with competing notes such as sweet and tangy as well as earthy and musty, reminiscent of the caves.
Wookey Hole Cave Aged Cheddar carries the coveted PDO (protected designation of origin) badge. PDO regulations protect the names of traditional foods in order to define their authenticity and preserve their place of origin, traditional methods of production and essential ingredients. Wookey Hole Cave Aged Cheddar is the only PDO traditional West County Farmhouse Cheddars to be matured in caves. Wookey Hole Cave Aged Cheddar is widely available throughout the UK at supermarkets, delis and cheese shops.
