Osip is a creative concept from acclaimed Chef Merlin Labron Johnson. Located in the heart of rural Somerset just outside the village of Bruton, the restaurant is 15 minutes’ drive from the station at Castle Cary, just one and a half hours from central London’s Paddington Station.
The kitchen at Osip, however, begins not in the building but in nearby fields where 85% of the produce used is grown between two farms and an orchard. Biodynamic and dictated by the seasonality of its West Country location, harvesting and foraging are ruled by what nature permits. A low-meat restaurant, Osip’s produce is supplemented by organic meat from a local farm in a hidden valley high in the nearby Quantock Hills. When ordering, the kitchen takes only whole animals and birds and prepares the meat in-house to minimise waste.
Osip opens up the conversation beyond the restaurant of how guests experience the energy of its exceptional home. Originally erected 300 years ago, the architectural nuances of the historic building are injected with traditional elements that reflect its history, reimagined for a modern mood. From the entrance lounge and bar to the open kitchen and dining room culminating in a dedicated tea house, design touchpoints and considered colour palettes have been created to unite each in one cohesive flow. Furniture, bespoke art pieces, fabrics and a unifying dark floor encourage visitors to move gradually through the space as they would a gallery.
