Every farm used to make its own cider, and many farmers used to pay their workers in cider.
The traditional cider-producing year — gathering the harvest in autumn, pressing the apples, fermenting the cider, ‘wassailing’ the apple trees with shotguns each January to drive away evil spirits and ensure a healthy harvest the next year — still lives on. (An orchard wassail refers to the ancient custom of visiting the trees, singing to them, reciting traditional incantations and dancing, in order to encourage them to produce an excellent harvest.). 
These days there are at least 30 working cider producers within Somerset. You can visit them, see the work going on, and buy Somerset cider within sight of the orchards where it was produced. It’s delicious, it’s cloudy — and it’s stronger than you think!
